Warm salad of spiced winter vegetables

    Ingredients

    200g baby parsnips, peeled and quartered
    400g kipfler potatoes, boiled and skin removed after cooking and sliced into rounds
    2 red onions, peeled and sliced into thin wedges
    200g brussels sprouts, trimmed and quartered
    400g pumpkin, peeled and seeds removed and cut into 2cm cubes
    200g gold sweet potato, peeled and diced into cubes
    100g baby spinach leaves
    Ingredients for the spice mix:
    4tbsp extra virgin olive oil
    1/4 tsp ground cloves
    2 tsp ground cumin
    2 tsp ground coriander
    1 tsp sweet paprika
    1/2 tsp cinnamon
    1/4 tsp salt
    Freshly ground black pepper to taste
    Ingredients for the orange vinaigrette:
    125ml freshly squeezed orange juice
    1 tbsp white balsamic vinegar
    2 tbsp extra virgin olive oil
    50g whole dry roasted hazelnuts
    Method

    Preheat oven to 190°C fan forced
