too hot.... too bitter

    I made a seasoning mix of my own dried tomatoes, garlic, indian black peppercorns and my own dried chillie. Wizzed them in the processor to a course powder. the mix is mostly tomatoe. my problem is it's very hot and rather bitter. Does anyone have any idea on making it less bitter and reduce the heat would be good. I really don't like the bitterness that's more of an issue than the heat.

    The bitterness is possibly from the garlic. Lemon zest and/or a bit of the best celtic sea salt?

    Thanks for that i'll try some celtic salt as I don't routinally use salt and next dish also add some palm sugar. I'll let you know the outcome
