Oxtail soup/stew

    Oxtail soup as cooked by myself this week. This is not a quick meal.

    One jointed oxtail should be about 14 pieces.

    Simmer for about 2-2.5 hours in a large saucepan, I used about 4 litres of water. Wipe or scoop fat/scum off the top with a couple of slices of bread and give to puppy. Don't add salt yet. Add more water if required.

    I then added :

    10 smallish quartered potatoes scrubbed but not peeled
    5 carrots - chunked
    2 small swedes [cut like french fries just to add texture]
    1/4 celery including leaves
    bouquet garni
    fresh parsley, coriander [a bit] and chives cos I have them.
    May need to add water to cover vegies.


    I also added the following about 1 hour later.

    1 desertspoon of garlic and 1 tablespoon of rolled oats - I try and sneak these ingredients in where I can.

    1 heaped desertspoon of rock salt.
    1 desertspoon of Gravox [I know this is cheating...:)]
    1 tablespoon of sweet paprika
    white or black pepper to taste.

    I simmer the vegies till the potato can be squashed with the back of a spoon and leave sit for about 30 minutes to develop the flavours. Total cooking/resting time is about 4 hours. Total quantity was about 5l. I dont own a crockpot but think it would do a great job.

    Most people will find this recipe lacks salt but it can be salted to taste at the table.

    I have a skinny 15yo that is not a big eater who must have eaten about 4 bowls full.

    Lots leftover for Sunday lunch with fresh bread.

    Purple,

    I have no issue with vegetarians and could probably even make the leap - except for one item - bacon... :)
