Hi, I'm am making my first batch of Apple cider vinegar and need help from any experienced/expert acv makers.... i juiced apples, put them into clean bottles, added the mother. After four weeks the bubbling stopped and it tasted like Apple cider vinegar. So I used a strainer and poured the vinegar into clean bottles again with a little (that went through the strainer) of the mother and yeast. I closed the lid on the bottles as the recipe said for two weeks for flavour to develop. i opened the bottle and it smells alcoholic. Tastes a little funny too. I tested 2 of the 5 bottles. Same on both. Please tell me where I have gone wrong and how I can save 10 litres of acv...
Since vinegar is the product of oxidized alcohol, perhaps the initial fermentation hadn't completely carried out. Maybe put your batch back into the bubbler for a while?
