Jicama , Yam Bean ,

    I tried this street food in Mexico and really enjoyed it .

    Pico de gallo
    Imagine there would be many regional and seasonal variations ,
    but you will always get chilli powder and lime juice .
    diced peeled jicama
    orange segments
    chopped red onion
    little bit of salt
    crumbled oregano
    lemon juice as well , just combine all ingredients

    still not got my reading glasses fixed so tiny print in some of the better cookbooks
    is beating me :shake: you will have to wait ,,
    but from memory other fruits are added cucumber , melon :y:
    Mexicans love watermelon ..

    saw it being used on that Vietnamese cooking show of
    Luke Nguyen's


    it is a great substitute for water chestnuts , it remains crispy even after cooking
