Drying mangos and bananas

    Has anybody living in humid sub-tropical region enjoyed any success with drying mango cheeks and banana slices using just the sun? A low-tech approach is essential as there is little money for gadgets or electricity for this Malawian community.

    I think mollisons book - ferment and human nutrition gives some ideas for drying

    we don't dry the bananas we freeze them - very successful for south east quensland

    Freezing is not an option in this case. This request is for some remote villages in Africa without access to power. I will follow up on the other resources.
