    Ive totally replaced sugar with our own stevia extract. I found it quite suprising the more u use it the less you want/crave any normal sugar. Pure extract is the way to go compared to stevia leaves benjy.

    How do we get the extract? From the stems? Help me here and I'll replant next season.

    i have never had a lot of success
    Tried using the whole herb, then dried. But this might be the way to go?
    Richters in Canada, list a few varieties. Some people complain of an anise flavour in some varieties but i have not found this.

    I like Mexican style chocolate
    Ibarra brand is a bit less sweet than the Abuelita one.
    If i dont have any I make my own with
    a small block or two of
    100%cacao (Luker- a Colombian brand)
    cinnamon,
    vanilla
    ground almonds
    sugar to taste.
    mix with molinillo (or whisk) in a small jug of water over heat
    pour through seive and add milk to taste.

    If enough cacao (liquor and butter) is used,
    it doesn't really need milk.

    sometimes, instead of cinnamon and almonds,
    I'll use vanilla (always vanilla with cacao for me) and
    a few pieces of fresh orange peel minus the pith.
    sweetener of choice...to taste.
    strain and serve with or without milk.

    Thanks for the stevia extract link, big M.I have managed to keep a plant going over winter and have taken cuttings of it toplant out as a crop in the garden this year.While I like using the dried leaves, the extract sounds like a better option.

    Dittos to what Mischief said. I tried the leaves from my last planting, but had the anise aftertaste and couldn't tone it down. I hope the seeds I saved are still viable. That planting I did before was about 4 years ago, The seeds I bought from the supplier were quite expensive, so I saved about about 100 grams of them. Not enough room to grow them in the greenhouse.
