I have an excess....

    Of cucumbers - and I'm keen to try making pickles. The recipe I found said to use mustard seeds, chilli flakes and fresh dill to flavour it. Trouble is I don't have any of those to hand. Any other suggestions as to how to make a basic pickled cucumber?

    not sure about pickled but cues make great relish

    So have you got a relish recipe you'd care to share? Preferably one that uses a LOT of cucumber!

    Simple Cucumber Relish

    This is Grannies seceret recipie (dont tell anyone else, she will kill me)

    2 1/2 cups spiced vinegar
    3 Lbs cucumber
    1 1/2 Lbs onions
    1 Lb brown sugar
    1/2 cup white sugar
    1 desertspoon salt
    1/2 Lb sultanas

    Bring to the boil, then simmer for 1 - 1 1/2 hrs

    Mix
    1 tablespoon Curry powder
    1 tablespoon Mustard powder
    1 teaspoon Tumeric
    1/2 cup spiced vinegar

    add stir quickly, and medium simmer for another 20 mins.

    This recipie also works with Zuccinie, Squash and everybody's favorite CHOKO
    I have even used a combination of the above, i just called it ZUCUEKO relish instead

    You can play with this basic recipie, in some ive added chillie ect, useing different vinegars apple cider vinegar was interesting, so start with the basic and then ajust to your own liking

    now as the old song goes
    GET INTO THAT KITCHEN AND RATTLE THOSE POTS AND PANS

    TIP - if useing a pot that causes sticking for long cooking times, useing glass marbles in bottom of pan will rectify this, just try keep them out of jars when bottleing
    TIP unpeeled cucumber can add a bitterness if you like, zucs,squash i dont peel, choko peeling is a matter of choise (i choose too)
