We have this beautifull old quincetree in our garden wich is filled with fruit at the moment. They will be ripe soon and i need some ideas. Last year i let them all fall, i was pregnant and could not find the energy to do something with them. But now i am at home with the baby i figure i might try my hand at making something. Previously i made some compote/ sauce like applesauce and i didnt really like it. I dont know if i did something wrong, so i could use something tips. Anyone have experience? Photo 1 Photo 2
We had a quince tree as a kid mum would make quince paste and a runnier jam version and did some stewed pieces in sugary syrup. I remember she talked of using the leaves a bit like bay leafs in stews but I cant remember seeing her actually doing it ??

Thanks for your replies, I've been very busy. There was about 50 kilo of quinces in the three, too much for us alone. I gave some away to family, I sold some (very nice too) and I am still processing the rest. My husband likes to drink lemonade/syrup so I tried to make some, turned out quite nice but not quite as planned. I cooked the quinces after quartering them, and when they where nice and soft I tried to get as much juice as possible from them. I put all the juice in a big pan and added sugar, about 1,5 kilo for every litre (for good preservation). For taste I added 1 pod of vanilla, a lemon and some cinnamon. The mistake I made, I brought it to a boil again, this is not necessary. Just dissolving the sugar and getting it to 75-80 degrees Celsius is enough. Then pour in sterilised bottles, I used twist cap bottles that come with tomato ketchup. Put them upside down for 10 min, and then right side up. When they are cooled the lid should be vacuum again. The result is really nice, you can mix with water (about 1 part syrup and 6/8 parts water to taste). Because I brought it to a boil its has gotten too firm, its more like jelly. Because I have so much more to process i bought a Steam Juicer, I will test it next week. I assume it will make this whole process a lot easier, that's is good because i have a lot more kilo's to process. (some pictures are found here)
